
Our Highlands are 100% grass-fed and finished as they roam around our 100+ acre ranch. Their marbling amount, which is the intramuscular fat, gives Highland beef its tenderness and succulence with a distinctive taste. These cattle mature at a slower pace which allows for more time for them to develop; enhancing the meat's quality and flavor. Highland beef was shown to be around 22% more tender (when cooked properly) than commercial beef with almost 7% more protein and 17% more iron. The best part is it averages over 4% less cholesterol!
